This Luscious Lemon Poke Cake recipe looks as good as it tastes. This delicious poke cake recipe is easy to do; you just use JELL-O Gelatin poured overtop. This is a great cake recipe to bring along for a potluck or to put on a dessert table. The light whipped creamed topping, and lemon garnish makes it irresistible. The ingredients you will need for this cake recipe include 2 round white cake layers cooked, boiling water, JELL-O lemon flavor gelatin, JELL-O lemon flavor instant pudding, cold milk, and thawed Cool Whip whipped topping.
To start make the cake recipe according to the package directions. Then once cooled place the two cake layers, with the tops up, in two round cake pans. Then pierce the cakes with a large fork at 1/2 inch intervals. Then add boiling water to the gelatin mix, and stir around two minutes until it is completely dissolved. Then carefully pour over the two cake layers. Refrigerate for three hours. Then beat the pudding mix and milk in large mixing bowl with a whisk for about two minutes. Then stir in the Cool Whip. Dip one of the cake pans in some warm water for about 10 seconds. Then unmold the cake onto a plate. Spread the cake with some of the pudding mixture. Unmold the second cake layer, and carefully place on top of the first cake layer. Then you frost the top and side of the cake with the remaining pudding mixture. Refrigerate the finished cake for one hour.
